Healthy Winter Butternut Squash Soup Recipe!

Hey Guys!

Today I thought I'd share a recipe for this delicious, warming winter soup that I made. It tastes so good and keeps you full and warm! It's also incredibly healthy and is suitable for vegans and coeliacs. I know this isn't my typical sort of post, but it was too good not to share.




Ingredients:

1 onion
1 tsp olive oil
1 clove garlic
1 butternut squash, cut into chunks
1 large potato, cut into chunks
500ml vegetable stock
Sprig thyme
Sprig rosemary
Quarter tsp chili flakes
Black pepper, to taste

Method:

1) Heat the oil in a big saucepan and add in the chopped garlic clove. Before it browns, add in the chopped onion. Stir for 2-3 mins until soft.





2) De-seed the butternut squash and chop into chunks (it does't matter what size, as it will be blended). Throw it in with the onion and garlic.

3) Peel and chop the potato and add that to the saucepan as well. Stir.




4) Make the stock according to the instructions and pour in to the pan. Season well with pepper, chill flakes, rosemary and thyme. Stir and reduce the heat. Cover and simmer for 15 mins, until the potato and squash are soft.




5) Remove some of the liquid (about 100ml) and put to one side. Blend the soup to your liking (I like mine completely smooth!) in a blender or food processor.


6) Serve immediately or freeze. Serve with fresh thyme, and big pieces of bread. If like me, you don't eat bread, then try Ryvita Crispbreads- so good!
