I didn't post on Sunday as I was ridiculously busy, so I apologize for that! But today, I thought I would make a festive favorite, hot chocolate, with one of my favorite ingredients… Caramel! I don't know if you know this about me, but caramel is my weakness! I try to avoid it as much as possible, but I was making caramel shortbread for my Secret Santa person, so we had a whole tub of caramel just sitting in the fridge, begging to be used! I added in a touch of sea salt, as I love the combination of salt and caramel, but of course you could leave it out.
Ingredients: (Serves 1)
1 cup milk of choice (I use almond milk)
1-2 heaped tsp of cocoa powder
1 tbsp caramel (an easy recipe will be added below)
1/4tsp sea salt
Mini marshmallows, cream, anything you want really!
1. Heat up the milk in a saucepan, but don't boil.
2. Stir in the cocoa powder really well. You might need to give it a quick whisk just to get rid of any lumps.
Put an unopened can of condensed milk in a big pan and fill the pan with plenty of water, enough to cover the whole can of condensed milk. Boil the can for 3 hours, and make sure to keep topping up the water so the can always stays covered. After 3 hours, carefully take out the can with tongs and put into a pot of cold water. The condensed milk will have turned into thick, delicious caramel that you can use in banoffee pie, caramel squares and of course, this hot chocolate! Please be very careful with the can as it will be boiling hot and you could burn yourself.
