Vegan Lime Bars

Hey guys,

I came across this recipe online and tweaked it a little bit to make it my own. They are so creamy and delicious, however there are two little adjustments that I would make if I were to bake these again; I would add the juice of another half a lime to the mix to make it more citrusy, and I would add more coconut oil to the base to make it less crumbly. I hope you enjoy!



1 cup almonds
1 cup oats
2 tbsp coconut sugar
4-5tbsp melted coconut oil


1 cup cashews (soak these in hot water for 1hr before beginning the recipe)
Coconut cream from 1 can of full-fat coconut milk (leave the can in the fridge for an hour or two)
1 1/2 tbsp cornflour
Juice from 2 limes
Pinch of sea salt
1/4 cup maple syrup


Pre-heat the oven to 180 degrees C. To make the crust, blend the almonds, oats and coconut sugar together.

Add the coconut oil gradually, stopping when the mix becomes a dough that holds together when you press it together with your fingers.

Pack the mix into a tray lined with parchment paper and pop into the oven for 12 minutes. Turn up the oven to 190 degrees C and allow to brown for 7-8 minutes. Let this cool fully.

Put the oven back to 180 degrees C. Drain the soaked cashews and blend with the maple syrup until a smooth pale mixture forms.

 Add in the rest of the filling ingredients and blend once more until fully combined. Pour this onto the cooled base and cook for 15 minutes until the middle is no longer liquidy.

Cut into squares and enjoy!
