1/2 cup melted coconut oil
1/3 cup brown sugar
1/4 cup almond milk
1/4 cup maple syrup
1 tsp vanilla extract
2 1/2 cups spelt/ gluten free flour
1/2 tsp baking powder
1/2 tsp bread soda/ baking soda
1/4 tsp salt
1/2 bar Lindt 70% dark chocolate (or more if you fancy!) broken into chunks
Pre-heat the oven to 180 degrees Celsius.
Melt the coconut oil if you haven't already done so, and add it to the brown sugar. Mix well.
Add in the almond milk, maple syrup and vanilla extract.
Add in the rest of the ingredients until a dough forms.
Roll into balls and place on a lined tin, space them out a bit as they spread out!
Bake for 12 minutes until golden brown and allow to cool.
